Made with Weet-Bix and oats, these bars are perfect for a nutritious boost anytime. I created them to be suitable for my preschooler's snack box, as they are free from common allergens. Enjoy them for breakfast, a snack, or an energy boost.
Ingredients:
- 4 Weet-Bix biscuits
- 2 cups rolled oats
- 1/2 cup honey or maple syrup
- 1 TBLS coconut flour
- 1/2 cup coconut oil or Avocado oil
- 1/2 cup dried fruits (raisins, cranberries, apricots)-optional
- 1/4 cup seeds (sunflower seeds, chia seeds)
- 1 tsp vanilla extract
- A pinch of salt
- 1/2 cup of chocolate chips (optional)
Instructions:
- Mix Dry Ingredients: Crumble Weet-Bix in a bowl. Add oats, dried fruits, and seeds.
- Combine Wet Ingredients: Melt coconut oil. Stir in honey, vanilla, and salt until smooth.
- Combine: Mix wet and dry ingredients until evenly coated.
- Set: Press mixture into a lined baking dish. Bake for 30mins or until it looks brown and crispy.
- Cut and Serve: DO NOT SLICE them until it completely cools down. You can even refrigerate before slicing. Feel free to drizzle a dark chocolate on top. :)
