Ingredients:
- 5 tbsp coconut oil
- 4 tbsp honey
- 3 tbsp peanut butter
- 200g rolled oats
- 100g dried raspberries
- 1/2 cup of mixed seeds
- 1/2 cup chopped nuts (e.g., walnuts, almonds, or pecans)
- 1 tbsp plain yogurt
- 3 tsp orange juice
Instructions:

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 8x8-inch baking pan or line it with parchment paper.

Prepare the Oat Base : In a saucepan, melt the coconut oil, honey and peanut butter over a medium heat. Once melted and combined, stir in the oats and seeds, continue to mix until all the oats have been coated. Fold in the dried raspberries.
- Press the Mixture: Take the oat mixture and press it firmly into the bottom of the prepared baking pan.
- Bake: Bake in the preheated oven for about 18-20 minutes or until the top is golden brown.
- Cool : Allow the bars to cool completely in the pan. And then transfer to the fridge for at least 1 hour.
- Cut : Once the mixture has completely cooled, mix the yogurt and orange juice together and drizzle over the top and cut into bars.
These bars are perfect for a sweet snack or dessert. Store any leftovers in an airtight container at room temperature or in the refrigerator.
