Raspberry Oat Bars

Kid-approved and parent-adored! These Raspberry Oat Bars are not just a treat for the taste buds but also a hit with the little ones. Make breakfast or snack time a joyous occasion with these kid-friendly delights!

Ingredients:

  • 5 tbsp coconut oil
  • 4 tbsp honey
  • 3 tbsp peanut butter
  • 200g rolled oats
  • 100g dried raspberries
  • 1/2 cup of mixed seeds
  • 1/2 cup chopped nuts (e.g., walnuts, almonds, or pecans)
  • 1 tbsp plain yogurt
  • 3 tsp orange juice

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 8x8-inch baking pan or line it with parchment paper.

  2. Prepare the Oat Base : In a saucepan, melt the coconut oil, honey and peanut butter over a medium heat. Once melted and combined, stir in the oats and seeds, continue to mix until all the oats have been coated. Fold in the dried raspberries.

  3. Press the Mixture: Take the oat mixture and press it firmly into the bottom of the prepared baking pan.
  4. Bake: Bake in the preheated oven for about 18-20 minutes or until the top is golden brown.
  5. Cool : Allow the bars to cool completely in the pan. And then transfer to the fridge for at least 1 hour. 
  6. Cut : Once the mixture has completely cooled, mix the yogurt and orange juice together and drizzle over the top and cut into bars.

These bars are perfect for a sweet snack or dessert. Store any leftovers in an airtight container at room temperature or in the refrigerator.
