Ingredients:
- 3 cups self-raising flour
- 1 cup thickened cream
- 1 cup lemonade (clear, sparkling lemonade works best)
- Pinch of salt
- Zest of 1 lemon (optional, for extra lemon flavour)
- 1 tablespoon melted butter (for brushing)
Instructions:

Preheat your oven to 200°C (about 390°F) and line a baking tray with parchment paper.

In a large mixing bowl, sift the self-raising flour. Add a pinch of salt and the lemon zest if using, and mix well.

Make a well in the centre of the flour mixture and pour in the thickened cream and lemonade.

Gently stir the mixture with a spatula or wooden spoon until it comes together to form a soft dough. Be careful not to over mix; the dough should be just combined.

Turn the dough out onto a lightly floured surface and gently fold it a few times until it's smooth and formed. Pat the dough into a circle about 2-3 cm (about 1 inch) thick.

Use a round cutter (about 5-6 cm or 2-2.5 inches in diameter) to cut out scones from the dough. Place the scones on the prepared baking tray, leaving a little space between each one.

Brush the tops of the scones with melted butter. This helps them brown nicely in the oven.
