Lemonade Scones

Super easy and always a hit with friends! These homemade lemonade scones are my go-to treat for any gathering. Let's dive into it!

 

Ingredients:

  • 3 cups self-raising flour
  • 1 cup thickened cream
  • 1 cup lemonade (clear, sparkling lemonade works best)
  • Pinch of salt
  • Zest of 1 lemon (optional, for extra lemon flavour)
  • 1 tablespoon melted butter (for brushing)

Instructions:

  1. Preheat your oven to 200°C (about 390°F) and line a baking tray with parchment paper.

  2. In a large mixing bowl, sift the self-raising flour. Add a pinch of salt and the lemon zest if using, and mix well.

  3. Make a well in the centre of the flour mixture and pour in the thickened cream and lemonade.

  4. Gently stir the mixture with a spatula or wooden spoon until it comes together to form a soft dough. Be careful not to over mix; the dough should be just combined.

  5. Turn the dough out onto a lightly floured surface and gently fold it a few times until it's smooth and formed. Pat the dough into a circle about 2-3 cm (about 1 inch) thick.

  6. Use a round cutter (about 5-6 cm or 2-2.5 inches in diameter) to cut out scones from the dough. Place the scones on the prepared baking tray, leaving a little space between each one.

  7. Brush the tops of the scones with melted butter. This helps them brown nicely in the oven.

  8. Bake the scones in the preheated oven for 12-15 minutes or until they are risen and golden brown on top.

  9. Once baked, transfer the scones to a wire rack to cool slightly. Serve warm with your favourite toppings such as jam, cream, or butter.
