Ingredients:
- 2 ripe bananas, mashed
- 1 banana for topping
- 1/3 cup melted butter or coconut oil
- 1/2 cup coconut sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
- Optional: 1/2 cup chopped nuts (such as walnuts or pecans), chocolate chips, or dried fruits
Instructions:
-
In a mixing bowl, combine the mashed bananas and melted butter or oil.
-
Add in the coconut sugar, beaten egg, and vanilla extract. Mix until well combined.
-
Sprinkle the baking soda and salt over the mixture, then gently fold in the flour until just combined. Be careful not to overmix.
-
If desired, fold in any additional ingredients such as chopped nuts, chocolate chips, or dried fruits.
-
Grease a small baking pan or mold that fits into your air fryer basket with a little oil or butter.
-
Pour the banana bread batter into the prepared pan, spreading it out evenly.
-
Lay the banana halves on top.
-
Air fry the banana bread at 320°F (160°C) for about 32 minutes.
-
Once done, carefully remove the pan from the air fryer and let the banana bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
-
Slice and serve the banana bread as desired. Enjoy!
Tip: Store the banana bread covered with a kitchen towel to keep it moist.
