Banana Bread-Air fryer Edition!

Ingredients:

  • 2 ripe bananas, mashed
  • 1 banana for topping
  • 1/3 cup melted butter or coconut oil
  • 1/2 cup coconut sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 cup chopped nuts (such as walnuts or pecans), chocolate chips, or dried fruits

Instructions:

  1. In a mixing bowl, combine the mashed bananas and melted butter or oil.

  2. Add in the coconut sugar, beaten egg, and vanilla extract. Mix until well combined.

  3. Sprinkle the baking soda and salt over the mixture, then gently fold in the flour until just combined. Be careful not to overmix.

  4. If desired, fold in any additional ingredients such as chopped nuts, chocolate chips, or dried fruits.

  5. Grease a small baking pan or mold that fits into your air fryer basket with a little oil or butter.

  6. Pour the banana bread batter into the prepared pan, spreading it out evenly.

  7. Lay the banana halves on top.

  8. Air fry the banana bread at 320°F (160°C) for about 32 minutes.

  9. Once done, carefully remove the pan from the air fryer and let the banana bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

  10. Slice and serve the banana bread as desired. Enjoy!

Tip: Store the banana bread covered with a kitchen towel to keep it moist.
